Wash the apricots and pat them dry. slice them in half and remove the stones. Next, add the apricots to a pot, add lemon juice and a small amount of water.

Cook for 15 minutes or until the apricots are soft and the juices are released. Add sugar, and stir until dissolved. Increase the heat and bring the fruit to a simmer, stirring continuously.

After a few minutes reduce the heat to medium and cook for about 30 minutes. Remove from heat and skim foam off the top.

Let the jam cool completely, then transfer to a jar.
