What Kind of Figs Should I Use?

Usually, according to the rules of Persian cuisine, figs are used whole for cooking jams. With this method of cooking, you can use yellow, green, or purple figs, with the difference that yellow or green figs give us a more colorful fig jam. For fig jam, it is better to use medium-sized figs and the figs should be neither too soft and overripe nor too hard. It is better not to squeeze the figs into the container or jar. Do not remove stems from figs because they will fall apart during the cooking process.

 

Why Jam Or Marmalade Turn Cloudy?

When cooking fig jam, do not put the lid on. Because the jam becomes cloudy and dark in color. Turn down the heat while cooking so that the syrup does not overflow.

 

What if The Jam Has Not Thickened?

Remove the figs from the syrup and put the syrup on low heat until it boils and thickens. If the syrup runs right off the spoon and looks too thin and runny, it’s not done yet. After cooling, the jam must have the necessary thickness.

Ingredients

  • 1kg green figs
  • 700gr sugar
  • 1 ½ cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon rosewater
  •  

Instructions

Step 1

Wash the figs in cold water and let them dry completely.

Step 2

Pour sugar and water into a large pot and put it on the heat until it boils, then add the figs to this juice.

Step 3

Let the jam boil for about 20 to 30 minutes on low heat and the figs soften, then add rosewater and lemon juice.

Step 4

Boil for another 5 minutes, then remove from the heat, pour into a glass jar, and let it cool. Store it in the refrigerator.

I was given Persian fig jam for Christmas. I was expecting a spreading jam but the figs are whole. What is the best way to serve this jam?

Hi Dee, Persian jams are usually cooked with whole fruits and served for breakfast in a small bowl with butter and warm bread for each person.
