– 4 bread slices – 2 eggs – 1/3 cup whole milk – 1/4 cup pumpkin puree – 1/2 teaspoon vanilla extract – 2 tablespoons brown sugar – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground ginger and ground nutmeg or pumpkin pie spice – Butter for the griddle and topping – Maple syrup for topping


Cut bread into 1-inch slices. Crack eggs in a wide shallow dish and whisk well until smooth. Add milk, pumpkin puree, vanilla, spices, and brown sugar.


Melt some butter in a large non-stick pan. Dip each slice of bread in the custard mixture. Place bread slices in a greased pan and repeat with the other toasts.


Turn them until both sides are golden. Transfer to a serving plate, top with butter, and drizzle with maple syrup.
