What You Will Need

– 1 cup all-purpose flour – 3/4 cup milk – 1 egg, at room temperature – 2 teaspoons baking powder – 1 teaspoon cinnamon – 1/4 teaspoon nutmeg – 1/4 teaspoon salt – 1/4 teaspoon ground ginger – 1 teaspoon vanilla extract – 1/3 cup pumpkin puree – 2 tablespoons butter, melted – 2 tablespoons brown sugar

In a bowl, mix the flour, salt, baking powder, ground ginger, cinnamon, and nutmeg. In another bowl, whisk the pumpkin puree, milk, vanilla, egg, melted butter, and sugar.

Add the wet ingredients to the bowl of dry ingredients and whisk so that the flour lumps do not appear inside the mixture.

Lightly grease a non-stick pan with oil spray. Pour 1/4 cup of the pancake batter into the pan. When bubbles start to appear on the top surfaces of the pancakes, turn them over.

Stack them on a plate and top with butter, walnut, and maple syrup.
