In a small saucepan, combine water, sugar, brown sugar, vanilla extract, and cinnamon sticks. Place the saucepan over medium heat.
Simmer and let the syrup thicken a bit. Remove the saucepan from the heat. Once cooled, strain out the cinnamon sticks, and transfer syrup to a clean glass jar.
Make a double shot of espresso. Warm the milk in a small saucepan and froth with a milk frother. Pour the espresso or into a mug. Add 2 tbsp of cinnamon dolce syrup and stir.
