Most people are hesitant to make homemade orange peel jam because they think it will be bitter. But with this trick that I will tell you, the jam will not become bitter at all and you do not need to add several cups of sugar to reduce the bitterness of the orange peels.
What Is The Difference Between Jam And Marmalade?
Jam is usually made from whole or sliced fruits that are boiled with sugar. Usually, only one type of fruit is used to make jam. The main ingredients of the jam are berries and small fruits. To make marmalade, fruit pulp, and rind, especially citrus fruits are used. Marmalade has a bitter and sweet taste and is a bit time-consuming to make, but at the same time, it is easy and very economical. The aroma and bitterness of marmalade are usually because of the citrus peel.
What You Need to Make Orange Peel Marmalade?
- Oranges: Use oranges with firm and vibrant orange rind. Ignore oranges with soft and spotted skin.
- Sugar: In this recipe, unlike other marmalade recipes, you do not need to add a lot of sugar. The amount of sugar in this recipe is perfectly balanced because we take the bitterness out of the orange rind with boiling. It is true that orange rinds have a lot of pectin and help to thicken the marmalade, but sugar also helps the concentration of the marmalade.
- Water
- Orange juice
How Do You Take The Bitterness Out Of Orange Peel?
- First, peel the orange with a vegetable peeler, zester, or a sharp knife and do your best to completely separate the white parts(pith), because these white parts will make the marmalade bitter. Cut the orange peel so that each of them is about 1.5 inches long.
- Place orange peels in a saucepan and cover with water and bring to a boil over high heat. After 3 to 5minutes strain in a colander and rinse with cold water. Then repeat these steps two more times. This helps to soften and take the bitterness out of the orange rind.
How to Tell if the Marmalade Is Set?
Put a small plate in the freezer to cool completely. When you feel the marmalade has reached the required concentration place a dollop of hot marmalade on the plate. Push the dollop with your finger, if it wrinkles, it is done. Otherwise, boil the jam for a few more minutes and try again. Also, note that the orange peel marmalade becomes thicker when placed in the refrigerator.
How to Segment Oranges?
- After cutting the orange rind, slice off the top and bottom of the orange with a sharp knife. Separate the white pith completely from the orange itself.
- Run the knife right alongside the membranes and just cut out the segments. Do this all the way around the orange and cut out all the segments.
