- Fresh or frozen strawberries: I usually make this sauce when strawberries are in season! But you can also use frozen strawberries that are of good quality. Defrost strawberries just before use.

- Vanilla extract: Vanilla and strawberries make a good combination. I add a little vanilla extract to jam or anything else I make with strawberries.

How to Make Vanilla Panna Cotta (Step By Step)
- Bloom gelatin: Place water in a small bowl and sprinkle gelatin over the surface. Let stand for 5-10 minutes to soften.
- Heat cream and milk: Add milk, cream, and sugar to a saucepan and put on low heat.
- Add gelatin: Stir until the sugar dissolves. While steaming stir in gelatin and whisk until smooth.
- Add vanilla: Add vanilla extract or vanilla bean seeds into the mixture and whisk until it has completely dissolved into the cream mixture and remove from the heat.
- Refrigerate: Refrigerate for 4-6 hours.
- Prepare strawberry sauce: First, wash the strawberries and remove the stem. Let the strawberries dry and then dice them finely. The size of the strawberries can be large. Put the chopped strawberries in the pot. Add the sugar and let the strawberries release their own juice for half an hour. After this time, put the pot on low heat. After a few minutes, increase the heat to simmer. Stir occasionally. After about 10 minutes, add vanilla extract and lemon juice. Allow to simmer for another 3 minutes. Then turn off the heat and puree the strawberries thoroughly. Now pass the pureed sauce through a strainer. This separates the strawberry pulp. Of course, I always skip this step because I also like the fruit pulps in the sauce. Allow the sauce to cool slightly, then pour the sauce into a sealed container and refrigerate for a few hours.
- Assemble panna cotta: The sauce is ready to serve with panna cotta. Spoon strawberry sauce on top of panna cotta and garnish with fresh berries.
