Baking bread has always been something I wanted to master. I always thought baking bread was a lot harder than baking pastries and cakes, which is why I usually did not go to it. But a few days ago I decided to put aside this fear and bake bread for the first time. This bread reminds me of my childhood days because my grandmother used to bake it for us. These soft bread buns are filled with walnuts and onions. I do not know the exact history of this bread, I only know that it is baked in the regions of east Azarbaijan in Iran. Here is my walnut and onion stuffed bread recipe.

Baking bread at home is always appealing, especially when the good smell of bread fills the whole house. The base of this bread recipe calls for simple ingredients like flour, yeast, milk, water, and oil. Every bread bun is filled with sauteed onions, walnuts, and turmeric, which is very tasty. This bread with feta cheese is great for breakfast. 😋

 

What Do You Need to Make Walnut and Onion Stuffed Bread?

  • Flour: For this recipe, you need all-purpose flour.
  • Yeast: Yeast is essential in the process of making bread. We use a leavening agent in dough or batter to make it rise. For this bread, I used active dry yeast.
  • Vegetable oil: In general, adding fat to the bread dough tenderizes the texture of the bread.
  • Milk: Water or milk or both are used to make the bread dough. Milk softens the texture of the bread and can improve the rise of the bread more when baked in the oven.
  • Salt
  • Walnut: The filling of this bread consists of chopped walnuts, onion, black pepper, and turmeric.
  • Onion: It is better to use yellow onion.
  • Turmeric:

How to Make Walnut and Onion Stuffed Bread Like a Pro?

Finely chop the walnuts. You can put them in the food processor and pulse for a few seconds. Finely chop the onion. Pour a little oil into a saucepan and saute the onion for 3 to 5 minutes until golden and soft. Then add chopped walnuts, salt, and black pepper. saute for another 5 minutes. Then remove from heat and set aside. Dissolve the yeast in 1/4 cup warm water and set aside for 10 minutes. After 10 minutes, the mixture should be bubbly. In a large bowl, combine flour and salt. Add the milk, the yeast mixture, and oil to the flour and mix together. Then knead for a few minutes so that the dough does not stick to your hands and it’s starting to be elastic.

Cover and leave in a warm place to rise for 30 minutes. Preheat the oven to 375ºF. Line baking trays with parchment paper. Divide the dough into 10 equal pieces. Gently roll out each piece into a small ball. Take a bun and make a dent in the middle and fill with walnut stuffing. Bring the edges together and smoothen the balls. Place them on a baking tray. Flatten them slightly and brush each one with egg yolk. Bake for 25 – 30 minutes until golden and crisp on the edges.

Ingredients

  • 1½ teaspoon active dry yeast
  • 2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/4 cup warm water
  • 1 teaspoon salt
  • 1 egg yolk, lightly beaten
  • For The Filling
  • 3 tablespoons oil
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 medium onion, finely chopped
  • 1 cup ground or finely chopped walnuts
