  • To make pancake batter, in another bowl mix together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl crack the egg. Whisk egg with a fork until consistency is even. Then add the buttermilk, room-temperature melted butter, and vanilla extract, and mix well.
  • Add the wet ingredients to the dry ingredients and mix until just incorporated. Do not over-mix. Heat up a non-stick saucepan at medium heat, then spray oil or add a little butter. You can use a 1/4 measuring cup or ladle to pour batter into the pan.
  • Cook each pancake until you see bubbles on the surface and the edges look golden brown and dry.
  • In a clean bowl whip together your heavy whipping cream and confectioners sugar until soft and fluffy.
  • To serve stack the pancakes on a plate and fill each of them with strawberries and whipped cream.
