Kotlet is pan-fried, crispy on the outside, and soft on the inside meat and potato patty. A mixture of grated potato, ground beef, grated onion, eggs, salt, and spices is flattened into small rounds and fried crisp. This traditional Iranian food is usually served with bread.

What do You Need To Make Kotlet?

  • Ground beef: Ground beef, lamb, or a mix of the two are traditionally used to make Kotlet.
  • Onion: Onion plays a decisive role in the good taste of Kotlet. Choose a large onion for 300 grams of meat and preferably separate the onion juice after grating.
  • Potatoes: Grate the potatoes with a fine grater. Potatoes give a nice crispy texture to the Kotlet.
  • Spices: The combination of spices used to cook Kotlet is salt, turmeric, and black pepper.
  • Flour: The flour or chickpea flour helps to bind the patties together and makes them easier to flip.
  • Egg: The egg acts like glue, holding all the ingredients together.

Instructions

  • Grate onion into a bowl with a hand grater. Extract the juice out of the onion by squeezing it.
  • Grate potatoes and add them to the bowl.
  • Finally, add ground beef, flour, egg, salt, pepper, and turmeric to the mixture.
  • Knead until the ingredients are just incorporated.
  • If you feel the mixture is not firm enough to hold its shape, then add more all-purpose flour or chickpea flour. Don’t over-mix or knead the Kotlet mixture.
  • Take a palm-sized ball of the mixture and flatten it using your hands.
  • Preheat a frying pan with vegetable oil. Once the oil is hot, add the prepared Kotlets to the pan. Fry them over medium/low heat until crispy and golden brown. Flip the Kotlets and fry the other side as well until crispy on both sides and fully cooked through. If you have a large frying pan, you can fry 5-6 Kotlets at a time.
  • Serve Kotlets with fried tomatoes, pickles, french fries, and bread.

 

Notes & Tips

  • You need to get the juice out of the grated onion before adding it to the meat mixture. Otherwise, the cutlets may fall apart.
  • Instead of raw potatoes, you can add cooked potatoes to the meat. Of course, the texture and taste of this cutlet will be different.
  • The cutlet spice mix is usually black pepper and turmeric, but you can also add other spices such as garlic powder, coriander powder, paprika, or red pepper.

Ingredients

  • 300gr of ground beef
  • 2 medium-sized potatoes, raw
  • 1 egg
  • 1 large onion
