  • Bring the water to a boil. Once it comes to a rolling boil, reduce the heat to medium. Let the potatoes cook for about 20-30 minutes, or until fork-tender.
  • After the potatoes are cooked, allow them to cool slightly then remove their skin. Next, mash the potatoes with a potato masher, then add them into a large bowl.
  • Peel the onion and grate it. Gently squeeze the grated onion and drain the extra water. Add it to the bowl containing the grated potatoes.
  • Break the eggs into a separate bowl and stir well with a fork until smooth.
  • Then add salt, black pepper, and turmeric to the eggs. Adding chopped parsley is totally optional. Fresh parsley adds a pop of color and flavor.
  • Next, add the egg mixture to the potatoes and mix well. The batter is read!
  • Pour some oil into the pan and allow the oil to heat up. Drop in a small spoonful of batter; if it sizzles in the oil, the pan is ready. Make small round-shaped patties or spoon the potato mixture into the oil.
