  • In another bowl crack the egg. Whisk egg with a fork until consistency is even.
  • Peel the banana and mash it. Do this with the back of a fork. It’s best to use a ripe banana. The ripe bananas are easy to mash with the fork. Then add the mashed banana, milk, vanilla extract, room-temperature melted butter, and peanut butter. mix well until smooth.
  • Stir in the dry ingredients into the wet ingredients. Mix until just combined. Do not overmix.
  • Preheat a non-stick pan or griddle over medium heat. Add a bit of butter or cooking spray.
  • You can use a 1/4 measuring cup or ladle to pour batter into the pan.
  • Cook each pancake on both sides until you see bubbles on the surface and the edges look golden brown and dry. Then stack them on a plate.
  • Serve with banana slices and extra peanut butter.
