Instructions 

  • For the filling, Chop onion and heat oil in a frying pan. Fry until golden and crisp.
  • Add the washed and chopped spinach leaves to the crisp and golden chopped onions. Stir to combine. Add salt and pepper cover and cook until the spinach shrinks in size and darkens in color.
  • Remove from the heat and add the crumbled feta cheese and mix.
  • Phyllo dough is sold in large circular or rectangular sheets. If your phyllo sheets are circular you should use a pizza cutter or a knife to cut them into 8 even triangles. If your phyllo sheets are rectangular cut them into strips. For this recipe, we need 16 phyllo strips of phyllo triangles.
  • Beat egg yolk with a fork until well blended.
  • Place 1 tablespoon of the spinach and cheese filling at the bottom center of each phyllo pastry strip. Fold the left and right sides of the pastry strip towards the center and roll it up. Brush the end of the pastry with egg yolk or oil and roll over to stick.
  • Roll the other strips in the same way. Place the spinach rolls on a baking tray lined with parchment paper. Brush them with egg yolk and sprinkle with sesame seeds.
  • Bake in a preheated oven at 200°C until golden brown and crispy.

Storage Tips

First, make sure that they have completely cooled down. Make sure that the cooled spinach rolls do not touch each other, leaving a space between them, you can put them in an airtight container and store them in the fridge for up to three days. Simply reheat them in the oven or microwave.

 

Fry Spinach Rolls in the Oil

If you do not have an oven, you can fry spinach rolls in oil. Just remember that in this method, you no longer need to brush the egg yolk on the rolls.

  • Spinach rolls can be prepared with baked potatoes. Potatoes can be finely chopped or pureed and then added to spinach.
  • Yufka or phyllo dough is sold in large circular sheets, around 60cm in diameter. For these spinach rolls, we need to make triangles for each roll.
  • For Turkish borek, you need to cut Yufka into 8 equal triangles. Spread 1 – 2 tablespoons of the filling into the large end of the triangle. Fold the edges and roll up until you reach the end.
  • If you like the taste of garlic, grate a clove of garlic and add it to the filling.
