You only need 3 ingredients to make this amazing salad:

  • Watermelon: It is best to use seedless watermelon for this recipe. Otherwise you should pick the seeds out of watermelon before use.
  • Lime juice: Lime juice adds a touch of freshness and zing to the salad and pairs well with watermelon.

  • Rinse watermelon under running water and dry it.

  • Place watermelon cubes in a large bowl and all lime juice. Toss well to coat.
  • Sprinkle the chopped mint leaves on top.
  • Cover an refrigerate until serving time.

Watermelon Salad Variations

  • For a savory version of this salad you can add crumbled feta cheese, cucumber, sunflower seeds and red onion.
  • If you don’t like watermelon to be the only fruit used in the salad, you can add a handful of fresh blueberries to the bowl.
